Steak & Chicken Chimichurri Skewers

Get your grills ready because the long-awaited grilling season is just around the corner! And what better way to kick off summer than with these mouthwatering chimichurri steak and chicken skewers. These skewers are the epitome of summertime simplicity, guaranteed to be the easiest thing you make all season. Pair them with a side of classic potato salad, hearty beans, or refreshing coleslaw for a complete and satisfying meal. The key to these skewers is the chimichurri sauce, which adds a burst of flavor to the veggies and is so versatile that you can use any vegetable you desire. So fire up those grills and get ready to indulge in the perfect summer meal.




Ingredients:

  • 1 lb steak (sirloin or flank steak), cut into cubes

  • 1 lb chicken breast, cut into cubes

  • Veggies of your choice

  • Salt and pepper, to taste

  • Wooden skewers ( soak for an hour before in water) or metal skewers

Chimichurri Sauce:

  • 1 cup fresh parsley, chopped

  • 1/2 cup fresh cilantro, chopped

  • 4 cloves garlic, minced

  • 1/2 teaspoon red pepper flakes (optional)

  • 1/2 cup olive oil

  • 1/4 cup red wine vinegar

  • Salt and pepper, to taste

Instructions:

  1. Prepare the chimichurri sauce by combining parsley, cilantro, garlic, red pepper flakes, olive oil, red wine vinegar, salt, and pepper in a bowl. Mix well and set aside.

  2. In a separate bowl, season the steak and chicken cubes with salt and pepper.

  3. In another bowl season your veggies of choice. I used bell peppers, onions, and zucchini.

  4. Thread the steak, chicken and veggies onto the skewers, alternating as you go.

  5. Preheat the grill to medium-high heat.

  6. Grill the skewers for about 10-15 minutes, turning occasionally, until the veggies are tender, the chicken is cooked through and the steak reaches your desired doneness.

  7. Remove from the grill and drizzle with chimichurri sauce before serving.
