What is Pesto Rosso?

Pesto Rosso, or red pesto, is a flavorful Italian sauce made primarily from sun-dried tomatoes, garlic, nuts (often pine nuts or almonds), cheese (such as Parmesan), and olive oil. Unlike the traditional green pesto, which is made with basil, Pesto Rosso offers a rich, tangy, and slightly sweet flavor profile that adds depth to various dishes.

Ingredients:

☆1 package of your pasta of choice ( I chose linguine)

☆1 small jar of rosso pesto sauce ( 6oz)

☆2 tablespoons of tomato paste or marinara sauce

☆16oz of heavy cream or fat free half and half ( if using half and half, add 2 tablespoons of cornstarch to your pan to thicken) 

☆1 small yellow onion diced very fine

☆Parmesean cheese for garnish

☆ Olive oil to cook the onions

☆ Salt and pepper as desired

Instructions:

1. Start by boiling your pasta until it's al dented.

2. In the meantime time dice your onions and cook in olive oil until they become translucent. 

3. Add in your wet ingredients to the onions and cook until the sauce starts to thicken. 

4. Add your pasta to your pan with the sauce and cook for another few minutes.

5. Serve and garnish with parmesean cheese, fresh parsley or even chives!
