Sheet pan sweet potato nachos - A healthy alternative for game day

These sweet potato nachos are sure to be a hit on your next game day or even for a twist on "Taco Tuesday." These nachos have all the flavors that we crave but with the the added benefits of fiber, vitamin A and antioxidants from the sweet potatoes. You'll be wanting to make these over and over again trust me!

Ingredients

  • 2 large sweet potatoes, thinly sliced

  • 2 tablespoons olive oil

  • 1 teaspoon chili powder

  • 1/2 teaspoon cumin

  • Salt and pepper to taste

  • 1 cup black beans, rinsed and drained

  • 1 cup corn (fresh, frozen, or canned)

  • 1 cup shredded cheese (cheddar or your choice)

  • 1 jalapeño, sliced (optional)

  • 1 avocado, diced

  • Fresh cilantro, for garnish

  • Sour cream ( optional)

  • Fresh lime wedges, for serving

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. In a large bowl, toss the sweet potato slices with olive oil, chili powder, cumin, salt, and pepper until evenly coated.

  3. Spread the sweet potatoes in a single layer on a large sheet pan. Bake for 20-25 minutes, flipping halfway through, until they are tender and slightly crispy.

  4. Remove the sheet pan from the oven and layer the black beans, corn, and cheese over the sweet potatoes. Add jalapeño slices if using.

  5. Return the sheet pan to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.

  6. Remove from the oven and top with diced avocado and fresh cilantro.
