Herb roasted chicken with lemon pepper orzo

This herb roasted chicken with orzo is a delightful and warming dish ideal for the current season. The seasonings in this recipe can be easily swapped out for your preferred options as well! Preparation time is under an hour, and leftovers can be enjoyed throughout the week. I always like to squeeze a little of fresh lemon on top before taking my first bite. The lemon in this really brightens up the dish and it's one of my favorite chicken recipes of all time. If you are looking to feed a bigger crowd you could also roast a whole chicken to get more bang for your buck. ;) As always, happy cooking!

Ingredients:

  • 3-4 boneless chicken thighs

  • 2 tablespoons olive oil

  • 2 teaspoons dried herbs (such as thyme, rosemary, and oregano)

  • Salt and pepper to taste

  • 1 lemon, sliced

  • 4 cloves garlic, minced

  • 1 cup orzo pasta

  • 2 tablespoons lemon pepper seasoning

  • 4 cups chicken broth

  • Fresh parsley for garnish (optional)

  • Favorite veggie for your side ( I chose asparagus)

Instructions:

  1. Preheat your oven to 350°F

  2. In a small bowl, mix the olive oil, dried herbs, salt, and pepper.

  3. Rub the herb mixture all over the chicken thighs, including under the skin for more flavor.

  4. Place the lemon slices and minced garlic on top of your thighs

  5. Place the chicken thighs in a roasting pan and roast in the preheated oven for 30 minutes or until the internal temperature reaches 165°F.

  6. While the chicken is roasting, prepare the orzo. In a medium saucepan, bring the chicken broth to a boil.

  7. Add the orzo and cook according to package instructions, usually about 8-10 minutes.

  8. Once the orzo is cooked, drain any excess liquid and stir in the lemon pepper seasoning.

  9. Remove the chicken from the oven and let it rest for 10 minutes.

  10. Serve the chicken on top of the lemon pepper orzo, garnished with fresh parsley if desired.
