Crispy honey salmon with pickled cucumbers and rice

If you're a sushi lover, then let me tell you about the perfect dish that will satisfy all your cravings - the crispy honey salmon bowl. This lunch staple has become my absolute favorite because not only is it healthy, but it also keeps me full for hours. The combination of flavors in this dish is simply unbeatable, with the bang bang sauce and sriracha adding a subtle kick of heat, while the honey brings a touch of sweetness. Plus, the best part is that you can easily make it on the stove or in an air fryer. So next time you're in the mood for something delicious and fulfilling give this one a try!

Ingredients:

  • 2 salmon fillets

  • Honey ( you can add as much as you like)

  • Sriracha ( optional) - I like this for added heat

  • Olive oil

  • Rice (white or brown)

  • Green onions, chopped

  • Cucumbers, thinly sliced

  • Bang Bang Sauce (store-bought or homemade)

  • Sesame seeds ( optional)

  • Red pepper flakes

  • Onion powder

  • Sugar

  • Salt

Instructions:

1. Prepare the Pickled Cucumbers

  • In a bowl, combine the vinegar, sugar, and a pinch of salt.

  • Add the thinly sliced cucumbers and toss to coat.

  • Let sit for at least 15 minutes to pickle.

2. Cook the Rice

  • Prepare rice according to package instructions. Set aside when done.

3. Prepare the Salmon

  • In a bowl, mix honey, red pepper flakes, onion powder and salt to taste

  • Heat olive oil in a pan over medium-high heat.

  • Coat salmon fillets with the honey mixture.

  • Place salmon in the pan, skin side down, and cook until crispy, about 4-5 minutes on each side. If using an air fryer set your temperature to 375 degrees and let it cook until the internal temperature reaches 145 degrees.

4. Assemble the Dish

  • Serve the crispy salmon over a bed of rice.

  • Top with pickled cucumbers and chopped green onions.

  • Drizzle with Bang Bang Sauce before serving.
