Roasted red pepper gnocchi

Ingredients

  • 1 pound gnocchi

  • 2 large roasted red peppers (jarred or homemade)

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • Salt and pepper to taste

Instructions

  1. Cook the gnocchi according to package instructions. Drain and set aside.

  2. In a blender, combine the roasted red peppers and blend until smooth. ( set aside a few of the roasted peppers to mix within the gnocchi)

  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and gnocchi to the pan and sauté until the gnocchi turn a crispy brown color.

  4. Stir in the blended roasted red peppers and cook for 2-3 minutes.

  5. Season the sauce with salt and pepper to taste.

  6. Serve immediately, garnished with fresh basil if desired.
