Green Goddess chickpea salad

This refreshing and nutritious salad features chickpeas paired with a vibrant green goddess dressing. It's perfect for a light lunch, side dish or to bring along to a picnic. Chickpeas are high in fiber and packed full of B vitamins. Cucumbers are great for digestion, skin health and more. Eating healthy doesn't have to be boring, so try this out and share with some friends!

Ingredients
1 can (15 oz) chickpeas, drained and rinsed
1 cucumber, diced
1 avocado, diced
1/4 white onion, thinly sliced
1/4 cup fresh basil, chopped
Fresh or dried basil for garnish
Salt and pepper to taste
For the Green Goddess Dressing
1/2 cup Greek yogurt or vegan yogurt
1/4 cup fresh herbs (parsley, basil, chives)
2 tablespoons lemon juice
1 tablespoon olive oil
1 clove garlic
Salt and pepper to taste
Instructions
In a large bowl, combine the chickpeas, cucumber, avocado, onion, and basil.
In a blender or food processor, combine all dressing ingredients and blend until smooth.
Pour the dressing over the salad and toss gently to combine.
Season with salt and pepper to taste.
Serve immediately or chill in the refrigerator for 30 minutes to let the flavors meld.
